Vermont Raw Honey is a totally raw honey.

Our farm is family owned and operated; we have been beekeepers since the early 1980’s. Why use the word raw? Our honey is not heated or cooked to prolong crystallization or fermentation.

Liquid honey has been processed with heat to speed up the bottling and filtering process. Processing with heat thins the honey so it flows thru piping and filters easier.

We care for our bees as a Beef Rancher would care for his prize bull. Our Honeybee management plan does not include any synthetic chemicals, hormones or pesticides. All procedures are natural and implemented with the welfare of the honeybees being paramount.

Sustainable Honeybee Farm practices must be adhered to in order for the colonies to be perpetual. Colonies must be kept strong in order for the bee farmer to expand the Apiary, thus sustainability can be achieved.

To our knowledge there has been no documentation produced to indicate a problem when using fermented honey in food or drink. To the contrary, there have been many posts about fermented honey being easier for the digestive system to process.

The natural yeasts in the nectar along with the enzymes added by the Honeybees causes honey to crystallize and then ferment.

Crystallized honey is spreadable but can be further softened by placing the jar in warm water with cap off the jar. Do not place in boiling and never place honey in the microwave unless you just want the honey flavor and not the nutritional value of the honey.

Raw honey crystallizes very fast. Our honey is very smooth and spreadable. Raw Honey will be different colors depending on the floral source of the nectar gathered by our bees. You will find bits of pollen and propolis as well as small chunks of beeswax cappings in our raw honey.

The bulk of our honey harvest comes from Aster and Goldenrod nectar. Various nectars are gathered by our bees thru out the spring and summer months. Giving the wildflower flavor.

Our honey is not processed with heat and is not filtered. The Honey goes from the comb to the jar and then to you. The honey is extracted from the honeycomb, then into a series of small stainless steel holding tanks. Any debris in the honey will settle to the bottom over night. The honey flows by gravity, with no heat or pumps. The honey we extract from the combs is bottled within 24 hours.

Our process is simple and without expensive equipment to drive up the price of our delicious product. The carbon footprint is kept to a minimum. Each frame is harvested by hand one at a time.

All extracted untreated honey crystallizes and can ferment. We have many customers that call and request honey that is about to ferment. Many of these folks are mostly mead makers or health food stores who have juice bars. Fermented honey makes a frothy and tasty drink.

This site is operated by New England Farms, who has honeybee apiaries in The Adirondack Mountains of New York and in Central Vermont. The Apiaries are harvested and bottled separately to ensure the integrity of the product being from the Empire State or the Green Mountain State.
